Cranberry Peach Granola
I have frantically been trying to use up all my peaches before they go bad! I've cut a bunch of them to freeze, I've dehydrated them, I've baked them into desserts and I've simply eaten them. So. Many. Peaches!
Granola is so easy to make and fun to customize so it's a great recipe to add my bounty of peaches to! Cereal is not an item on my grocery list. I personally think most cereals out there are too unhealthy or too healthy and taste like cardboard making them not worth buying. So I save money by not buying it, but it also means that I need to hunker down and make my own if I get the craving for it. Thankfully, granola is quick to make, healthy and very inexpensive when made at home!

Ingredients:
- 3 cups old fashioned oats
- 1/2 tsp salt
- 1/2 cup honey
- 1/8 cup olive oil
- 1/2 cup chopped almonds
- 1/4 cup flax seeds
- 1/2 cup dried coconut chips
- 1 tsp cinnamon
- small pinch of nutmeg
- 3/4 cup chopped dried peaches
- 1/2 cup cranberries
Preheat oven to 300F.
Combine all the ingredients; expect the dried peaches and cranberries, in a bowl. Mix together so everything is coated.
Spread the mixture out onto a lined baking sheet. Pop into the oven for 15 minutes. After the first 15 minutes, remove from the oven and stir the granola around. This is so all of the granola cooks evenly. Then put it back in the oven for another 10-12 minutes. Remove from oven and let cool. The granola will crisp up as it cools.
Once cool, transfer your granola to a bowl and add the dried peaches and cranberries. Enjoy!
Store in an airtight container.
I love having a jar of homemade granola ready to go for a quick breakfast. It also makes a healthy grab-and-go snack!
